Snack Attack – savory and sweet nut butters from the blender

At this time of year we prefer to crumble at home, turn on the heating, snuggle up on the couch and read our favorite book. Then comes the moment when our stomach starts to growl and suddenly we can’t think of anything other than a delicious snack! Hearty yet sweet? Hmmm. What could be better than a delicious nut butter bread? Fluffy pancakes with almond butter topping? Or a creamy smoothie with peanut butter? Oh yeah! There are so many nut butter recipes and the best thing is: They are super easy to make in the bianco di puro high speed blender.

Basically every nut butter recipe works the same way. It starts with the decision of the nuts. Almonds? Hazelnuts? Peanuts? When we have made up our minds, we go for the unprocessed nuts in the supermarket. Even better: maybe we even have a walnut tree in the garden? It is important to ensure high quality and to use the nuts in their raw state. At the beginning we roast the nuts in the oven, not only to elicit the wonderful aroma, but also to let the natural fats escape. At around 50 ° degrees in the oven for around 20 minutes – the time may vary depending on the type of nut. With its own fat, you don’t need to add any further oils and the mass will still be creamy. Now it’s time to put the roasted nuts in the blender and start mixing on a low level. If you mix directly at the highest level, it can happen that the nuts press themselves directly to the side, stick to the edge and the knife can no longer grip them. Most bianco di puro mixers have a “Sauce” program button that is wonderfully suitable for nut butters and precisely avoids this effect. If you want, you can also add dates or maple syrup to sweeten or cinnamon to flavor. Sea salt, cardamom and cocoa powder also go great. Everything is allowed – as long as it stays nutty!

We are always experimenting and trying. It’s a lot of fun because you can’t go wrong and every nut butter tastes delicious. Nevertheless, we don’t want to withhold our current favorite nut butter recipe:

  • 150g almonds
  • 100g hazelnuts
  • 50g cashew nuts
  • 2 tsp maple syrup
  • 1 teaspoon cinnamon
  • a pinch of Himalayan salt

Dare to experiment and it is best to have several storage jars ready in the closet. Whether as a topping, on bread, in smoothies or in sauces – nut butters can be combined in so many ways and are a blast every time!
